Pancake Saturday

Pancakes are the best first recipe: a few ingredients, real measuring, and a flip at the end. Forty-five minutes on a Saturday morning, and your kid made breakfast.

What you need

  • 1 cup flour, 2 tbsp sugar, 2 tsp baking powder, 1/4 tsp salt, 1 cup milk, 1 egg, 2 tbsp melted butter or oil
  • Measuring cups and spoons, plus a butter knife for leveling
  • Two bowls, a small cup for cracking the egg, and a whisk
  • Nonstick pan or griddle and a wide spatula
  • A sturdy step stool

Before you start

  • No tasting the batter. FDA says don't eat raw flour, dough or batter; cooking is what kills germs in flour and raw eggs. Taste the finished pancake.
  • Wash hands after cracking the egg, at least 20 seconds with soap and water (CDC).
  • Handle turned in, Dad at the stove. AAP says turn pan handles toward the back. Kids flip only with your hand on theirs, never leaning over the heat.
  • For a small burn, AAP says soak it in cool water right away. No ice, no butter. Call your pediatrician if pain lasts more than a few hours.

Steps

  1. Wash up and read it out loud. Wash hands, line up the ingredients and read the recipe out loud together.
  2. Measure the dry things. Measure and level the flour, sugar, baking powder and salt, then whisk.
  3. Crack the egg. Tap the egg on the counter, open it over a small cup, then wash hands.
  4. Stir wet into dry, and stop. Mix the milk, egg and butter, pour into the dry bowl and stir until just mixed.
  5. Dad heats the pan. Heat the pan on medium with a little butter and pour 1/4 cup of batter per pancake.
  6. Watch the bubbles and flip together. Flip when bubbles stay open and edges look dry; cook the other side about a minute.
  7. Serve, then wipe down. Plate the pancakes, add toppings, then wipe the counter and stack the bowls.

If it stalls

  • If the first pancake comes out ugly, call it the test pancake. That's its job.
  • If they want to flip alone, practice off the stove first: a cooked pancake, a cold pan, ten flips onto a plate.
